Chocolate Mousse

Preparation time: 10 min.
Chilling time: 3 hrs. or overnight

This is probably one of the richest and smoothest chocolate mousses you will ever taste. It is also the easiest to make.

For 4 servings you will need:

6 oz. semi-sweet chocolate squares or bits
3 Tbsp. orange juice
2 Tbsp. Kahlua or other coffee liqueur
2 egg yolks
2 eggs
1 tsp. vanilla extract
1/4 cup sugar
1 cup whipping cream
Chocolate-covered cookies for garnish

Preparation:

1. Combine the chocolate, orange juice and Kahlua in the top of a double boiler. Place over hot water and simmer until the chocolate melts. Set aside to cool.

2. Place the egg yolks and eggs in a blender container. Add the vanilla and sugar. Blend for 2min. at medium high speed.

3. Pour in the cream and blend for another 30 seconds.

4. Add the melted and cooled chocolate. Blend until smooth.

5. Pour into a bowl or individual serving cups. Cover and refrigerate for 3 hrs. or overnight. Garnish with chocolate-covered cookies and serve.

For 8 servings: Double the ingredients.

Spicy Muffnuts

Preparation time: 25 min.
Baking time: 25 to 30 min.
Oven temperature: 375°F

These little puffs taste like cake doughnuts but are as easy to make as a batch of muffins. After baking, you roll them in melted butter and then in a mixture of sugar and cinnamon.

For 12 muffnuts you will need:

1 1/2 cups all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
3/4 tsp. ground nutmeg
1/4 tsp. each ground coriander and ground allspice, optional
1/2 cup sugar
1/3 cup vegetable shortening
1 egg, slightly beaten
3/4 cup milk
1/4 cup butter or margarine
1/4 cup sugar
1/2 tsp. cinnamon

Tips: For variations, you can add 1/2 cup chopped nuts, raisins, dates or chocolate chips to the batter before filling muffin tins.

Preparation:

1. In large mixing bowl, stir together flour, baking powder, salt, nutmeg, coriander and allspice, if used, and the 1/2 cup sugar.

2. Cut in shortening until mixture is coarsely crumbly. Beat egg and milk. Pour over dry ingredients. Stir just until flour is moistened.

3. Fill greased muffin pans 1/2 to 2/3 full. Bake at 375°F for 25 to 30 min. or until lightly browned.

4. Meanwhile, melt 1/4 cup butter and place in small dish. Mix sugar and cinnamon.

5. Roll hot muffins in butter and then immediately serve in cinnamon-sugar. Serve hot.

Cheesy Bread Sticks

Preparation time: 30 min.
Rising time: 30 min.
Baking time: 25 to 30 min.
Oven temperature: 300°F

These bread sticks are a flavorful and crunchy addition to meals. If you wish, you can form them into words to suit the occasion, such as “Happy Birthday,” “Good Luck,” “Bon Voyage,” or “Congratulations.”

For 18 sticks you will need:
2 pkgs. active dry yeast
1 Tbsp. sugar
1 1/2 cups warm water (105°F to 115°F)
1/4 cup oil
1/2 cup shredded cheese
3 to 3/12 cups all-purpose flour
2 tsp. salt
1 egg white beaten with 1 Tbsp. water
Sesame or poppy seeds
Coarse salt

Preparation:

1. Dissolve yeast with sugar in warm water. Let stand 5 min. Add oil. Add cheese.

2. Stir in 1 cup of the flour mixture and salt, mixing well. Add remaining flour 1/2 cup at a time until dough is spongy.

3. Knead on lightly floured surface until dough is smooth and satiny. Cover. Let rest 5 min.

4. Shape dough into an 18-inch roll. Cut into 1-inch pieces. Let dough rest 5 min. longer.

5. Roll each piece into a bread stick, using your palms to stretch dough. Brush with egg white-water mixture.

6. Roll in sesame or poppy seeds. Place on greased baking sheets about 1-inch apart. Sprinkle with salt. Let rise about 30 min. until puffy.

7. Bake at 300°F for 25 to 30 min. until golden brown and crisp.

Good served with: Soups, stews or salads. Or with cocktails as a change from crackers.

Tips: Place seeds on waxed paper and roll breadsticks in them. This procedure will keep more seeds on the sticks and fewer on the baking sheets. Refrigerate bread sticks in airtight containers to preserve crispness. Heat before serving.

Family-Style White Bread

This basic white bread is one that you can vary many ways. We offer two ways: a raisin bread and a cinnamon loaf. The bread itself is excellent for sandwiches, toasting or just to spread with peanut butter and jelly.

For 2 large 9 1/4-by-5 1/2-inch loaves, you will need:
2 pkgs. active dry yeast
5 to 5 1/2 cups bread flour or all-purpose flour
1/4 cup sugar
2 tsp. salt
1/4 cup oil or melted shortening
2 cups hot tap water (120° F to 130°F)
Melted butter to brush loaves after baking

Raisin Bread: Stir in 1 to 1/2 cups raisins before shaping into loaves.

Cinnamon Loaf: To shape, roll dough out to a 14-by-7-inch rectangle. Sprinkle mixture with 2 Tbsp. sugar, 2 tsp. cinnamon. Roll up tightly to make loaf. Let rise and bake as for plain loaf.

Tips: If you use bread flour, you may need a little less to make a stiff dough than when using all-purpose flour. Both flours make a fine loaf of bread.

Preparation:

1. Measure yeast, 2 cups of the flour, sugar, salt and oil into large mixing bowl, blending well. Stir in the hot water and beat with spoon until mixture is smooth and satiny.

2. Slowly add 3 cups more flour, mixing until dough pulls away from sides of bowl. Cover and let stand 10 min.

3. Turn dough out onto lightly floured surface and knead until smooth and satiny.

4. Place dough into greased bowl. Cover with plastic wrap. Let rise in warm place about 1 1/2 hrs. until doubled.

5. Punch dough down. Divide into 2 parts. Shape each part into a loaf. Place into 2 greased 9 1/4-by-5 1/2-inch bread pans. Let rise again about 1 1/2 hours. until doubled.

6. Bake at 375°F 40 to 45 min. or until loaves sound hollow when tapped and are golden in color. Remove from pans immediately. Thrn brush tops with melted butter.

Cocoa Brownies

Preparation time: about 15 min.
Baking time: 30 min.
Oven temperature: 350°F

Brownies, everybody’s favorite, should be prepared in big batches. These brownies are moist, studded with walnuts, require no frosting, and are quick to stir up.

For 60 brownies you will need:

1 cup shortening, butter or margarine
2 cups sugar
1 cup cocoa
4 eggs
1/2 tsp. baking powder
1/8 tsp. salt
1 cup luke warm water
2 cups all purpose flour
1 cup chopped walnuts

Preparation:

1. Cream shortening, butter or margarine with sugar until well blended.

2. Add the cocoa and mix until smooth.

3. Add eggs and mix until fluffy.

4. Stir in baking powder and salt.

5. Add water alternately with flour and whip until fluffy.

6. Fold in nuts.

7. Turn into a greased, waxed paper-lined jelly roll pan, 15 1/2-by-10 1/2-by-1-inch.

8. Bake at 350°F for 30 min. or until brownies feel firm when touched on top.

9. Cut into 1 1/2 inch squares.

Tips: These moist brownies keep very well when wrapped and stored in the freezer, refrigerator or in an airtight tin.

Double Buns

Preparation time: 15 min.
Rising time: about 1 1/4 hrs.
Baking time: 12 to 15 min.
Oven temperature: 400°F

These attractive little breads are actually rich rolls. The Mennonites traditionally serve them at weddings, usually accompanied by cheese and coffee.

For 18 buns you will need:

1 pkg. active dry yeast
1 Tbsp. sugar
1 tsp. salt
3 1/2 to 4 cups unbleached flour
1 1/4 cups milk
1/4 cup water
1/2 cup butter or margarine

Tips: If you wish you can brush rolls with mixture of egg yolk mixed with 1 Tbsp. water before baking.

Preparation:

1. In large bowl, mix yeast, sugar, salt and 1 1/2 cups of the flour.

2. In saucepan, combine milk, water, and butter. Heat until very warm – 105°F to 115°F (butter need not melt).

3. Gradually add to dry ingredients. Beat at medium speed for 2 min. Add 1/2 cup flour. Beat at high speed for 2 min. Stir in enough more flour to make a soft dough.

4. Turn out onto lightly floured surface. Knead for 5 min. or until smooth and elastic. Put onto oild bowl, turning to oil top. Cover with plastic wrap. Let stand in warm place for 45 min. or until doubled.

5. Punch down. Turn out onto floured surface. Shape two-thirds of dough into 18 2-inch balls. Arranged on greased baking sheets. Shape remaining dough into 1-inch balls. Put 1 small ball in center of each larger ball. Press down to seal.

6. Let rise in warm place for 20 to 30 min. or until light.

7. Bake at 400°F for 12 to 15 min. or until well browned. Remove to wire racks to cool.

Garden Salad Mold

Preparation time: 20 to 25 min.
Chilling times: 2 hrs. or overnight

The fresh flavors of cucumbers, green peppers, green onions and celery are combined together in an easy make-ahead salad that can be molded into attractive individual salad molds.

For 4 servings you will need:
1pkg. (3 oz.) lemon-flavored gelatin
1/2 tsp. each dried chervil and tarragon leaves
1 cup boiling water
1 cup sour cream
2 Tbsp. tarragon-flavored vinegar
1/4 tsp. salt
3/4 cup finely diced celery
1/2 cup finely diced radishes
1/2 cup finely diced cucumbers (pared and seeded)
1/4 cup each finely diced green pepper and green onion
Lettuce to line plates
Paprika Dressing (recipe follows)

Paprika Dressing: In saucepan, heat 1/2 cup sugar and 1/4 cup lemon juice just until sugar is dissolved. Add 1 tsp. celery salt, 1 tsp. paprika, 1 tsp. Dijon-style mustard and 1/2 tsp. grated onion. Slowly add 1 cup salad oil while beating until dressing is thick. Makes 1 1/2 cups.

For 2 servings:
Half of the ingredients.

For 8 servings:
Double the ingredients and use a 6 to 8-cup mold.

Preparation:

1. In mixing bowl, stir lemon gelatin with chervil and tarragon. Add boiling water. Stir until gelatin is dissolved.

2. Cool in refrigerator or over ice until syrupy. Stir in sour cream, vinegar and salt. Fold in vegetables.

3. Pour into 4 lightly oiled individual molds or a 3 to 4-cup mold. Cover and chill 2 hrs. or overnight.

4. Unmold onto individual serving plates or large platter lined with lettuce. Serve with Paprika Dressing.

Good served with: Summer picnic menus or patio barbecue meals.

Cucumber-Yogurt Salad

Preparation time: 15 min.
Chilling time: 30-45 min.

This particular cucumber salad originated in Europe but it almost as popular in our country. A delight for a weight-watcher since cucumbers are very low in calories.

For 4 servings you will need:

3 cucumbers, about 8 inches each
2 Tbsp. salt
Cold water
1 cup natural yogurt or sour cream
1 Tbsp. fresh lemon juice or 1/2 Tbsp. cider vinegar
1/2 tsp. lemon pepper or freshly ground pepper
Chopped fresh chives, dill or parsley for garnish, optional.

Preparation:

1. Wash and peel cucumbers, Cut into wafer-thin slices. Put into a bowl.

2. Sprinkle with salt. Cover and let stand in refrigerator for about 30 min.

3. Rinse cucumber in very cold water, preferably with some ice cubes. Drain. Chill again.

4. Meanwhile mix yogurt or sour cream with lemon juice or vinegar.

5. Place cucumber in serving bowl. Top with yogurt mixture. Sprinkle with lemon pepper or ground pepper. Garnish with chives, dill or parsley, if you like.

Tips: When buying always look for firm, crisp and well shaped cucumbers with a bright green color.

For 2 servings: Half of the ingredients

For 8 servings: Double the ingredients

Three Cheese Ball

Make this cheese ball the day before for holiday entertaining and serve it with assorted crackers and/or crisp breads.

For 1 1-lb cheese ball you will need:
1 pkg (8 oz) cream cheese, softened
1.3 cup crumbed Roquefort or blue cheese
1 container (5 oz.) processed hickory-smoked flavor or sharp American cheese spread
2 Tbsp. whipping cream
1 tsp. Worcestershire sauce
1 Tbsp. each minced onion and stuffed olives
2 Tbsp. finely minced parsley
Shredded lettuce
Dried summer savory or caraway seeds, optional Stuffed olive slices.

Preparation:

1. Combine cheeses and cream in mixing bowl or food processor work bowl and process until smooth.

2. Add Worcestershire sauce, onion, olives and parsley, mixing well. Cover and chill overnight.

3. Shortly before serving, shape mixture into a ball. Serve on a bed of shredded lettuce. Sprinkle with savory or caraway seeds, if desired. Garnish with olive slices.

Tips: If cheese ball must be stored for any length of time, substitute onion powder for the minced onion.

Holiday Rice Pudding

One of the most basic grains – rice – is enjoyed in a fluffy pudding that is lightened with whipped cream, perfumed with almond flavoring and studded with nuts and topped with raspberries.

For 5 to 6 servings you will need:
1 1/4 cups milk
1 1/4 cups water
1/4 cup sugar
1 cup uncooked rice
2 Tbsp. soft butter or margarine
1/2 tsp. almond flavoring
1 cup whipping cream
1 Tbsp. sugar
1/2 cup blanched, slivered almonds
Raspberry jam or sauce

Preparation:

1. In large saucepan, combine milk, water and the 1/4 cup sugar. Bring to a boil over high heat. Stir in rice.

2. Reduce heat. Simmer, uncovered, about 30 to 35 min. or until rice i tender and liquid is absorbed.

3. Remove from heat. Stir in butter and almond flavoring until well combined. Cool. Whipp cream. Beat in 1 Tbsp. sugar.

4. Fold cream and almonds into pudding. Cover and chill at least 2 hrs. before serving. Serve with raspberry jame or sauce.
