Deviled Eggs Florentine

Preparation time: 20 to 30 min.

A creamy spinach filling adds to the flavor and appearance of this deviled egg recipe. Using a decorating pastry bag to pipe the yolk mixture make them especially pretty.

For 12 deviled egg halves you will need:
6 large eggs, hard-cooked
1 pkg. (10 oz.) frozen spinach
1 Tbsp. sour cream
1/4 tsp. salt
Dash each nutmeg and cayenne pepper
2 Tbsp. mayonnaise
1 tsp. prepared mustard
Salt to taste
Paprika

Preparation:
1. Peel the eggs and cut into halves. Remove yolks to small bowl. Set aside.

2. Cook frozen spinach as directed. Drain thoroughly, pressing out excess water.

3. Place spinach in blender or processor with sour cream, salt, nutmeg and cayenne. Purée. (Mixture will be a little dry, so scrape down sides of bowl and start up 2 or 3 times.) Spoon mixture into a bowl. Set aside.

4. Use a fork or blender to mash the yolks with mayonnaise, mustard and salt.

5. Spoon spinach mixture into each egg half. With a decorating bag, pipe yolk mixture over top or use a fork. Sprinkle each egg half with paprika before serving.

Good served with: Black olives, cherry tomatoes or carrot curls.

Dadar Gulung (Sweet Omelet)

4 serving

You will need

3 1/2 oz. desiccated coconut
2/3 cup water
1/2 cup sugar
salt
3 1/2 oz. flour
1 1/2 cups milk
1 egg
food coloring (red or green powder)
2 teaspoons oil or butter

Make the filling: Mix the coconut, appx. 2/3 cup water and 1/2 cup sugar in a pan. You can also add a little salt, if desired. Cook until water is reduced.

Put the flour, milk, egg and food coloring in a bowl, mix well. Salt to taste (about 1/4 teaspoons). Brush pan with oil and heat. Add enough egg mixture for a thin crêpe. Repeat.

Place the filling into the crêpe, then roll up as shown in the photograph.

Cheddar Mousse

Cooking time: 10 mins.
Preparation time: 25 mins.
Main cooking utensils: saucepan, 5-in. soufflé dish

For 4 people you need:
Cheese sauce:
2 tablespoons butter
1/4 cup all-purpose flour
1 1/4 cups milk
1 cup grated Cheddar cheese
seasoning

2 teaspoons tomato paste
2 teaspoons made mustard
little cayenne pepper
1 envelope gelatin
1 tablespoon cold water
3 tablespoons boiling water
2 egg yolks
2 egg whites

Garnish:
cucumber fans
parsley sprig

1. Prepare the soufflé case by tying a wide band of double wax paper around the outside so it extends above the rip for 2-3 inches.

2. Make the cheese sauce as Card 21.

3. Add the tomato paste, mustard, and cayenne pepper.

4. Soften the gelatin in the cold water, dissolve in the boiling water.

5. Add the egg yolks and dissolved gelatin to the cheese sauce, stirring over gentle heat until it thickens.
DO NOT BOIL.

6. Cool, stir occasionally, and, when almost set, fold in the stiffly beaten egg whites.

7. Pour into the prepared soufflé case.

8. Set in a cool place.

TO SERVE: Remove paper carefully, drawing it back and helping it with the blade of a knife. Garnish with cucumber fans(see photograph) and a sprig of parsley, and serve with a salad.

Serve instead of a dessert or as a light luncheon dish.

TO VARY: Omit the tomato paste.
TO STORE: In a refrigerator.

Cheese sauce: Heat butter or margarine in a pan. Remove from heat. Stir in flour. Cook for 2-3 minutes stirring well until dry. Remove from heat. Gradually blend in liquid. Bring to boil, stirring well, and season. Add grated cheese to the very hot sauce. Cook gently for 1-2 minutes only.

Baked Spiced Eggs


Preparation time: 7 minutes
Cooking time: 38-40 minutes
To serve: 4

You will need
2 large onions
2 cloves garlic (optional)
1 small bunch fresh coriander leaves or watercress
1/4 green pepper
1 tablespoon vinegar or Worcestershire sauce
1 teaspoon sugar
2 oz. cooking fat
4 eggs
1/2 teaspoon cummin [Sic] powder
1/2 teaspoon salt

Thinly slice the onions. Finely chop the garlic, coriander leaves and green pepper. Mix the vinegar or Worcestershire sauce, and sugar. Fry the onions lightly in the cooking fat, until soft. Add the garlic, green pepper and coriander leaves to the onions. Fry for 3 minutes, stirring all the time. Beat the eggs and add to the onions in the pan. Add cummin [Sic] powder. Remove from the heat and pour in vinegar and salt. Stir the mixture well. Pour into an ovenproof dish and put in pre-heated moderate oven (350°F. or Gas Mark 4) to set. It should take about 30 minutes to set.

Steamed Egg Custard with Vegetables (Chawan-mushi)

Preparation time 20 minutes
Cooking time 30 minutes
To serve 4

You will need

4 eggs
1 1/8 pints stock
salt
2 teaspoons mirin (See Card No. 20)
1 1/2 teaspoon soy sauce
1/4 teaspoon monosodium glutamate
3 oz. very thinly sliced chicken
4 dried shiitake (dried Japanese mushroom) or canned mushrooms
4 prawns
4 oz. white fish
1/2 teaspoon sake (Japanese rice wine) (see Card No. 20)
4 green beans

Beat the eggs well, add stock, 1 teaspoon salt, 1 teaspoon mirin, 1/2 teaspoon soy sauce and 1/4 teaspoon monosodium glutamate. Strain into a basin. Put chicken on to a plate, add 1 teaspoon mirin and 1 teaspoon soy sauce and leave for 5 minutes. Soak shiitake in water till soft, then drain, if mushrooms are used, slice thinly. Peel and devein the prawns and cut in half. Shred the fish and sprinkle with the sake and a little salt. Slice the green beans thinly in a slanting direction. Cook in boiling water and drain. Divide the chicken shiitake, prawns, fish and green beans equally between 4 fireproof dishes. Pour the egg mixture over, cover with greased paper and steam until custard has set (about 20 minutes).

Note This is a hot dish in which chicken, shiitake, green beans, fish, prawns, etc. are steamed together in an egg mixture. It can be made from canned crab meat only with the egg mixture. Also, instead of steaming each serving separately, it can all be put in a casserole together and baked in the oven as a baked custard.

Brunch Eggs with Creamed Salmon

Preparation time: about 20 min.

Attractive and delicious for brunch or luncheon, this flavorful dish also might be served for a late Sunday or holiday breakfast. For variety try muffins made with part whole wheat flour.

For 4 servings you will need:

1 can (7 3/4 oz.) salmon
Milk
1/4 cup butter or margarine
1/4 cup all purpose flour
1/2 tsp. salt
1/8 tsp. black pepper
1 tsp. Dijon-style mustard
4 Tbsp. minced celery
2 Tbsp. chopped chives
1/8 tsp. salt
2 English muffins, split
4 warm hard-cooked eggs, halved
Chopped fresh parsley or dill
Lettuce and tomato slices

For 2 servings:
Half of the ingredients

For 8 servings:
Double the ingredients but use 1 large can of salmon

Preparation:

1. Drain liquid from salmon and add enough milk to make 2 1/4 cups. Flake salmon and mash round bones. Set aside.

2. Melt butter in heavy saucepan. Blend in flour, 1/2 tsp. salt and black pepper. Remove from heat. Stir in liquid.

3. Return to low heat and cook, stirring, until thickened. Add salmon and keep warm.

4. Toast muffin halves. Spread with mustard. Top with celery, chives and sprinkle with salt.

5. To serve, arrange 2 egg halves, round side up, on each muffin half. Top with the salmon sauce. Sprinkle with parsley or dill. Serve with lettuce and tomato slices.

Curried Eggs

1 oz. lard
2 medium onions, peeled and chopped
1 level tablespoonful curry powder
1 level teaspoonful curry paste
1 level teaspoonful concentrated tomato paste
2 level tablespoonfuls flour
3/4 pin stock or water
salt and pepper
1 medium cooking apple, peeled and chopped
2 tablespoonfuls mango chutney
6 eggs
8 oz. long grain rice

1. Melt lard and sauté onions for 5 mins. Stir in curry powder and paste. Cook slowly for 5 mins. Stir in the tomato paste and flour. Gradually add the stock, stirring. Bring to the boil, adjust seasoning.

2. Add the apple and chutney. Simmer for about 15 mins. Meanwhile boil the eggs for 8 mins. Cook rice in boiling salted water until a grain just tender when tested between the fingers. Drain. Pile in a ring around the edge of a serving dish.

3. Shell eggs, cut in half lengthwise, and arrange in the centre of rice.

4. Pour curry sauce over. Serve with Mango chutney.

Steamed Omelette (Gee Yuk Jing Dan)

Cooking time: 10 minutes
To Serve: 4

You will need
4 eggs
2 oz. minced pork
1 teaspoon chopped water chestnuts
1 teaspoon chopped onion
1 teaspoon sherry
1 tablespoon soy sauce
pinch salt
1/4 teaspoon monosodium glutamate
1 1/2 tablespoons water
1/2 teaspoon lard

Separate the egg white and yolk, beat the white and mix with minced pork, chopped water chestnuts, onion, sherry, soy sauce, salt, monosodium glutamate and water. Mix them well, remove the mixture into a deep plate or bowl which has been rubbed with lard. Add the yolk gently to the mixture as the photograph shows. Put the plate or bowl in the steamer and steam for 15 minutes.

Quiche Lorraine

Pastry for one-crust, 9-inch pie shell
2 tablespoons butter
1/2 cup finely chopped onion
1/2 pound bacon, crisply fried and crumbled
1 1/4 cups Swiss cheese, grated
4 eggs
2 cups cream
1 teaspoon salt
1/8 teaspoon pepper

Heat oven to 425°. Prepare pastry, following recipe directions. Roll out 1/8 inch thick and line a 9-inch pie plate. Bake in hot oven 5 minutes. Cool and put in the freezer for at least 1 hour. Sauté onions in butter until transparent. Sprinkle bacon, cheese and onion in bottom of frozen shell. Beat eggs, cream and seasonings; add to pie shell. Put on a flat shelf in freezer; wrap when frozen. To serve: Heat oven to 425° and bake 15 minutes; reduce heat to 350° and bake for 50 minutes or until knife inserted 1 inch from edge comes out clean. NOTE: To bake without freezing, reduce final baking time to 30 minutes.

Deviled Eggs

Main cooking utensils: 3 saucepans

For 4 people you need:
Creole rice:

1 small onion, peeled
1 stalk celery
1 small green sweet pepper
2 tablespoons butter
1/2 cup mushrooms
3/4 cup rice
1 1/2 cups stock
seasoning

Eggs and sauce:
4 eggs
2 tablespoons butter
1/4 cup flour
1 1/4 cups tomato juice
salt
1 teaspoon made mustard
1 teaspoon Worcestershire sauce
pinch brown sugar

1. Chop onion coarsely with celery and pepper, removing core and seeds.

2. Fry in the butter for 5 minutes without browning.

3. Add sliced mushrooms and rice, cook for further 4 minutes, add stock.

4. Cover pan, cook for 20 minutes or until no moisture remains. Season well.

5. Meanwhile hard-cook the eggs and make the sauce.

6. Melt the butter, stir in flour, cook for 2 minutes, remove from heat.

7. Gradually blend in tomato juice, simmer until thickened, add remaining ingredients, and cook for 5-10 minutes. Season well.

TO SERVE: Put rice into a hot dish, top with halved shelled eggs. Pour sauce over or serve separately.

TO VARY: If green pepper is not available, use canned pimiento. Omit mushrooms and add chopped bacon.
