Prune-Stuffed Roast Pork

3 1/2 lb loin of pork
1 pkg (1 lb) pitted prunes
2 tablespoons butter or regular margarine
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon ground ginger
2 cans (10 1/2 oz size) condensed beef broth, undiluted
1/2 cup lemon juice
1 envelope unflavored gelatine
4 slices lemon

1. Preheat oven to 350F.

2. Wipe pork with damp paper towels; trim off excess fat.

3. With long, sharp knife or 2 skewers, make 2 deep holes 1 inch apart, on each end, straight through the length of roast.

4. Using fingers, push 12 to 14 prunes into holes.

5. In hot butter in 6-quart Dutch oven (about 14 inches long), brown roast on each side. Sprinkle with salt, pepper, and ginger.

6. Place rest of prunes in Dutch oven, and pour in 1 can beef broth. Insert meat thermometer into thickest part of meat. Roast, covered, 30 minutes.

7. Remove cover. Roast, basting every 30 minutes, 1 1/2 hours, or until thermometer registers 180F; add water if necessary.

8. Remove roast from pan to tray. Purée liquid from pan, prunes, and 1/4 cup lemon juice in electric blender.

9. Spread purée over roast. Refrigerate several hours.

10. To make glaze: In small saucepan, soften gelatine in remaining 1/4 cup lemon juice. Add remaining can beef broth; stir over medium heat until mixture starts to boil.

1. Set pan in bowl of ice cubes, stirring occasionally, 15 minutes, until mixture is consistency of unbeaten egg white.

12. To decorate: Cut lemon slices in half. Press into prune purée, in an attractive pattern. Spoon thickened gelatine mixture over entire surface. Refrigerate 1 hour. Serves 6 to 8.

Hungary – Pork-Kraut Stew

2 pounds pork stew meat, cut into 1-inch pieces
2 tablespoons vegetable oil
2 medium onions, chopped (about 1 cup)
1 clove garlic, finely chopped
2 cups water
1 tablespoon paprika
2 teaspoons instant chicken bouillon
1 1/2 teaspoons caraway seed
1 teaspoon salt
1/8 teaspoon pepper
1 can (27 ounces) sauerkraut, drained
Snipped parsley
1 carton (8 ounces) dairy sour cream

Cook and stir pork stew meat in oil in 10-inch skillet over medium heat until pork is brown; drain on paper towels. Cook and stir onions and garlic in same skillet until onions are tender. Stir in pork, water, paprika, instant bouillon, caraway seed, salt and pepper. Heat to boiling; reduce heat. Cover and simmer 1 hour.

Stir in sauerkraut into pork mixture. Heat to boiling; reduce heat. Cover and simmer until pork is tender, about 30 minutes. Sprinkle with parsley and serve with sour cream. 6 to 8 servings.

Hungarian Holiday Stew: Stir a mixture of 1/4 cup water and 2 tablespoons flour into pork mixture after second simmering. Heat to boiling, stirring constantly. Boil and stir 1 minute; reduce heat. Stir in sour cream; heat just until mixture is hot. Sprinkle with parsley.

Piggybank Pork Bake

4 ounces uncooked fine noodles
2 tablespoons shortening
2 cups cut-up cooked pork
1 can (10 1/2 ounces) condensed cream of chicken soup
1 can (8 ounces) whole kernel corn
1 can (2 ounces) sliced pimiento
1 cup shredded sharp Cheddar cheese (about 4 ounces)
1 medium green pepper, finely chopped

Heat oven to 375°. Cook noodles as directed on package; drain. Melt shortening in large skillet; brown meat. Drain off fat. Stir in noodles, soup, corn (with liquid), pimiento (with liquid), cheese and green pepper.

Pour into ungreased 1-quart casserole. Bake uncovered 45 minutes, stirring occasionally. 6 servings.

To make saucy pimiento garnish (pictured), cut a canned whole pimiento into a piggybank shape and use a clove for an eye.

Kielbasa With Red Cabbage

1/4 cup light brown sugar, firmly packed
1 tablespoon grated orange peel
1 clove garlic, crushed
1 1/2 teaspoons salt
1/2 teaspoon nutmeg
1/4 teaspoon pepper
1/8 teaspoon ground cloves
2-lb head cabbage, shredded (about 12 cups)
3 medium onions, sliced
3 medium cooking apples, pared, cored, and sliced
1 large red pepper, cut in thin strips
1//2 cup orange juice
1/4 cup wine vinegar
1 ring (2 lb) kielbasa

1. Preheat oven to 350F. In small bowl, combine brown sugar, orange peel, garlic, salt, nutmeg, pepper, and cloves.

2. In Dutch oven, arrange in layers, half of cabbage, half of onions, and half of apples. Sprinkle with half of brown sugar mixture. Top with half of pepper strips. Repeat.

3. Pour orange juice and vinegar over top.

4. Bake, covered, 1 hour.

5. Make 1/4-inch-deep slashes, at 2-inch intervals, in kielbasa. Place in Dutch oven, pressing down to partially cover kielbasa with pan juices. Bake, covered, 30 minutes longer.

Makes 6 servings.

Pork Sausage Croutes

Cooking time: 15 mins.
Preparation time: few mins
Main cooking utensils: skillet, broiler pan, or toaster

For 6 people you need:
12 pork sausages
3 slices bacon
2 tomatoes
2 dessert apples
little shortening
6 rounds bread

1. Prick and fry the sausages until golden brown – they should be friend without extra fat.

2. When cooked put onto a hot dish and keep warm.

3. Cut each bacon slice into halves, roll and secure with a wooden toothpick and fry with little or no shortening until crisp, put with the sausages.

4. Slice the tomatoes – do not cook.

5. Fry the cored, sliced apples in the hot fat until golden brown on either side.

6. Toast the bread (or fry if preferred).

7. Put the sausages on top of the bread, then rings of apple and tomato; garnish with parsley.

8 Arrange bacon rolls around dish.

TO SERVE: Hot with baked beans or mashed potatoes and a green vegetable.

TO VARY: Spread the bread with a little mustard or chutney after toasting.

Pork Chops and Frankfurters

Cooking time: 20 mins
Preparation time: 20 mins
Main cooking utensils: broiler pan, saucepan, skillet

For 4 people you need:
4 small pork loin or rib chops
seasoning
4-6 tablespoons melted butter
4-8 frankfurters
1 green sweet pepper(optional)
2 small eating apples
12-oz. can sauerkraut

Garnish:
parsley

1. Season the pork chops. If very lean brush with little melted butter, and broil until tender, turning over and lowering the heat when browned on either side.

2. Simmer the frankfurters in boiling water for 5 minutes, then drain.

3. Fry sliced pepper and apples in the rest of the butter, add the sauerkraut, and heat thoroughly.

4. Put the apple mixture onto a hot dish, top with the chops and frankfurters, and garnish with parsley.

TO SERVE: Sliced raw tomatoes are a good accompaniment, or fried mushrooms

TO VARY: Use canned corn instead of sauerkraut.

Ham à la King

1/4 cup butter or margarine
1/4 cup flour
1/2 teaspoon salt
1/2 teaspoon dry mustard
2 cups milk
1/4 cup diced green peppers
1 6-ounce can sliced mushrooms, drained
2 cups diced cooked ham
2 hard cooked eggs, diced
2 tablespoons chopped pimento
6 patty shells or toast cups

Melt butter in a saucepan over low heat. add and blend in flour, salt and mustard. Slowly add milk, while stirring. Cook until sauce is thickened. Add green peppers, mushrooms, ham, eggs and pimento; pour into patty shells.

Christmas Roast Pork

10-to-12-lb bone-in fresh ham
1 cup pitted dried prunes
1 cup dried apricots
2 teaspoons salt
1/8 teaspoon pepper
1/2 cup unsifted all-purpose flour
2 cans (13 3/4 oz size) clear chicken broth
6 spiced crab apples
Parsley sprigs

1. Preheat oven to 325F. Wipe ham with damp paper towels. Trim fat to about 1/4 inch thickness, leaving any skin. Score fat into 1-inch diamonds.

2. With long, sharp knife, make deep slits to the bone, 2 to 3 inches apart, all over surface. Using fingers, push prunes and apricots alternately into slits. Rub surface with salt and pepper. Insert meat thermometer into thickest part of meat, being careful to avoid slits. Place roast, fat side up, on rack in shallow, open roasting pan.

3. Roast, uncovered, 2 hours. Drain off fat, and discard. Pour 1 cup water over roast; roast 1/2 hour longer. Pour 1 cup water over roast; repeat every 1/2 hour until meat thermometer registers 180F. (Total roasting time is approximately 6 hours.) If roast is getting too brown, place sheet of foil loosely over top. Remove roast to heated platter; keep warm.

4. Pour drippigns into 2-cup measure; let stand a few minutes. Skim off fat, and discard.

5. In small bowl, stir flour and 1 cup broth until smooth.

6. In medium saucepan, combine remaining broth and drippings. heat to boiling. Slowly add flour mixture, stirring constantly until mixture returns to boiling and thickens; reduce heat, simmer 5 minutes, stirring occasionally. Add salt to taste.

7 To serve roast: Skewer 2 apples on each of 3 wooden sewers. Insert skewers in bone end of ham. Garnish wish parsley. Pass gravy. Makes 10 to 12 servings.

Pineapple-Glazed Roast Pork

10-lb bone-in fresh ham
1 teaspoon salt
1/4 teaspoon pepper
2 cups sliced onion
1 can (10 3/4 oz) condensed chicken broth, undiluted
1 can (8 3/4 oz) crushed pineapple, drained
1/4 cup honey
1/4 teaspoon cinnamon
1/8 teaspoon ginger
6 tablespoons flour

1. Preheat oven to 375F. Wipe ham with damp paper towels. Remove skin and excess fat from ham. Rub with salt an pepper. Place, fat side up, in shallow, open roasting pan.

2. Roast, uncovered, 1 1/2 hours. Remove from oven. Reduce oven temperature to 350F.

3. Darin drippings from pan; discard. Arrange onion slices around ham. Pour chicken broth into pan. Insert meat thermometer into thickest part of meat, away from bone.

4. Roast, covered 2 hours. Remove from oven. Pour drippings into medium saucepan, and set aside.

5. In small bowl, combine pineapple, honey, cinnamon, and ginger. Spread evenly over ham. Roast, uncovered, 45 minutes longer, or until meat thermometer registers 185F.

6. Skim off excess fat from drippings in saucepan. Measure 4 cups liquid and return to saucepan. Mix flour with 1/4 cup water until smooth. Stir into drippings. Bring to boiling, stirring constantly. Reduce heat, and simmer 3 minutes. Serve with ham. Makes 8 to 10 servings.

Spiced Frankfurters In A Hurry

A simple but interesting treatment is given to frankfurters as they gently simmer in a flavorful sauce of tomatoes, onions, green pepper and celery. Aromatic oregano and paprika add more good flavor to this quick and easily prepared one-pot meal.

For 4 servings you will need:
1 to 1 1/4 lbs frankfurters
2 Tbsp. butter or margarine
2 medium onions, sliced
1 clove garlic, minced or pressed
1 green pepper, sliced
2 to 3 stalks celery, sliced
1 can (16 oz) whole tomatoes with liquid
1 tsp. dried oregano leaves
1/2 tsp paprika
Dash black pepper
Salt to taste

Tips: If you like, you can substitute other smoked sausage for the frankfurters and used canned ready-cut tomatoes for whole.

Preparation:

1. Cut each frankfurter into thirds. Melt 1 Tbsp. of the butter in a skillet. Lightly brown the frankfurters. Remove and keep warm.

2. Add remaining butter. Saute onions till lightly browned. Add the garlic. Saute 1 min. longer. Stir in green pepper and celery. Cook 3 or 4 min. more or until tender-crisp.

3. Add tomatoes with liquid, oregano, paprika, black pepper and salt to taste. Simmer until heated through. Serve immediately.

Good served with: Noodles or rice.

For 2 servings: Half of the ingredients
For 8 servings: Double the ingredients but use 1 large clove of garlic.
