Canned Salmon in Shells

1 pound canned salmon, include liquid
1 tablespoon chopped onion
1/4 cup chopped green pepper
2 tablespoons lemon juice
1 teaspoon prepared mustard
1 cup soda cracker crumbs
2/3 cup milk
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons butter or margarine, melted
2 eggs, slightly beaten

Preheat oven to 350°. Blend all ingredients and divide among 6 greased shells. Bake 25 to 30 minutes until done.
NOTE: recipe can also be used to make a loaf. Extend baking period to 35 to 40 minutes.

Sausage Stuffed Steak

2 1 1/4 to 1 1/2-pound flank steaks
Salt and Pepper
1/2 pound ground pork
1/2 pound ground beef
1/4 cup chopped celery
1/4 cup chopped onion
1 cup prepared cornbread stuffing mix
1/4 cup water
1/4 cup shredded carrot
1/2 cup coarsely chopped walnuts
1 apple, pared and diced
1 egg

Prepare coals. Gently pound steaks with a mallet to 1/4-inch thickness; season with salt and pepper. Sauté sausage in a skillet until lightly browned; add beef and brown completely. Remove meat; drain all bu 2 tablespoons fat. Sauté celery and onion until tender. Combine stuffing mix with water; add meat, vegetables, walnuts, apple and egg. pin long sides of steaks together with toothpicks; turn meat so picks are on bottom and spread stuffing mixture over meat. Roll tightly, beginning with the long side; skewer ends to enclose stuffing securely. Using butchers string, tie roll securely in 5 or 6 places; remove toothpicks. When coals are ready, spread them in a circle to the outside of the grill; place meat in center of grill. Cook 1 to 1 1/2 hours until done, turning frequently.

Nut Roast

3 eggs, beaten
1 cup soft whole wheat bread crumbs
1/2 cup coarsely chopped pecans
1 1/2 cups ground walnuts
1 1/2 cups evaporated milk
2 tablespoons grated onion
1/4 cup minced celery
3 tablespoons oil
1 teaspoon salt
1/4 teaspoon poultry seasoning
1 teaspoon seasoning and browning sauce

Heat oven to 350°. Mix all ingredients and bake in a buttered loaf pan for 30 to 40 minutes, until lightly browned.

Serves 6

Cranberry-Apple Leg of Lamb

1 whole leg of lamb, trimmed
2 cloves garlic, crushed
Salt, pepper, paprika
1-pound can whole cranberries
1/2 cup applesauce
1/2 teaspoon cinnamon
1 teaspoon grated lemon rind

Preheat oven to 325°. Rub lamb with garlic; sprinkle with salt, pepper and paprika. If available, insert meat thermometer so tip is in the center of the thickest part of meat and does not touch bone or rest on fat. Roast in oven until thermometer reads 150° (about 1/2 hour before done). Blend together cranberries, applesauce, cinnamon and lemon rind; pour over lamb. Return to oven and bake until thermometer reads 175° (allow 25 to 30 minutes per pound of meat). This makes a medium-done leg of lamb (for rare, finished temperature should read 140° to 150°; for well-done, 180°).

Steak Diana With Curried Pears

2 tablespoons butter or margarine
2 8-ounce cubed steaks
2 tablespoons sweet sherry
3 tablespoons chopped green onions
1 tablespoon chopped parsley
1 2-ounce can mushrooms, drained
1 tablespoon Worcestershire sauce
Salt and pepper
1 fresh pear
1/4 cup crushed pineapple
1 tablespoon brown sugar
1/2 teaspoon curry powder

Melt butter or margarine in a heavy skillet, add steaks and saute quickly on both sides until brown. Add remaining ingredients and heat through. Serve sauce over meal.

Curried Pears: Cut pear in half and remove cored. Mix pineapple, brown sugar and curry powder together. Fill pear cavities with mixture and broil – about 4 inches from heat – for 10 to 15 minutes or until pear is tender. * Recipe can be doubled for 4 servings.

Creamy Cheese Pie

1 1/3 cups zwieback crumbs
1/3 cup brown sugar
1/2 teaspoon cinnamon
1/3 cup melted butter or margarine
4 3-ounce packages cream cheese, softened
2 eggs
1 teaspoon lemon juice
1 teaspoon grated lemon rind
3/4 cup sugar
1 teaspoon vanilla
1 cup sour cream
Cocktail cherries, spearmint leaf candies (optional)

Preheat oven to 350°. Combine crumbs, brown sugar, cinnamon and melted butter; press into a 9-inch pie pan. Reserve 2 tablespoons of mixture for decoration on finished pie. Beat cream cheese, eggs, lemon juice and rind, sugar and vanilla together until smooth and creamy.

Pour into prepared crust and bake 30 minutes. Spread sour cream on top of pie and chill several hours before serving. If desired, decorate top of pie with cocktail cherries, pieces of green spearmint leaf candies and a sprinkling of reserved crumbs.

Serves 10 to 12

HELPFUL HINT: For variety, 1 tablespoon of white raisins, candied orange peel and citron may be included in the filling; or fruit toppings such as pineapple, cherry, blueberry, strawberry or peach – can be served over the pie.

Quiche Lorraine

Pastry for one-crust, 9-inch pie shell
2 tablespoons butter
1/2 cup finely chopped onion
1/2 pound bacon, crisply fried and crumbled
1 1/4 cups Swiss cheese, grated
4 eggs
2 cups cream
1 teaspoon salt
1/8 teaspoon pepper

Heat oven to 425°. Prepare pastry, following recipe directions. Roll out 1/8 inch thick and line a 9-inch pie plate. Bake in hot oven 5 minutes. Cool and put in the freezer for at least 1 hour. Sauté onions in butter until transparent. Sprinkle bacon, cheese and onion in bottom of frozen shell. Beat eggs, cream and seasonings; add to pie shell. Put on a flat shelf in freezer; wrap when frozen. To serve: Heat oven to 425° and bake 15 minutes; reduce heat to 350° and bake for 50 minutes or until knife inserted 1 inch from edge comes out clean. NOTE: To bake without freezing, reduce final baking time to 30 minutes.

Broccoli with Deviled Eggs

1 1/2 pounds fresh broccoli or 2 packages frozen broccoli
4 hard cooked eggs
2 tablespoons mayonnaise
1/2 teaspoon prepared mustard
1/2 teaspoon onion salt
1/2 teaspoon pepper
Paprika

Wash broccoli, cut off large leaves and a thin slice of the lower stalk. If stalks are thick, slice lengthwise – almost to the flowerets. Place in a skilled, add 1 inch boiling, salted water and cook uncovered for 5 minutes; cover, and simmer 5 minutes longer. Do not overcook – broccoli should be slightly crisp and a bright green color.

Cut off upper 1/3 of egg white. Scoop out yolks and mash together with the cut-off whites. Blend in mayonnaise, mustard, onion salt and pepper. Garnish with paprika.

Combine marinade ingredients. Arrange eggs and broccoli on a platter. Pour marinade over broccoli, refrigerate at least 1 hour before serving.

Serves 4

Chopped Chicken Liver Paté

1 pound chicken livers, washed and drained
1 tablespoon minced dry onion
1/4 cup chopped onion
2 eggs, hard-cooked
2 tablespoons bouillon, if needed
Salt and pepper
2 envelopes unflavored gelatin
1 cup water
1 10-ounce can beef bouillon
Garniture: carrot and green onion slices, celery leaves

Set oven on 500° or “Broil.” Cook livers 5 minutes on one side; turn, sprinkle with minced dry onion and broil 3 minutes more; cool. Put livers, onions and eggs through a food mill; add pan juices and blend. If additional liquid is needed, add chicken bouillon. Season with salt and pepper. Sprinkle gelatin over cold water in a small saucepan. Over low heat, stir constantly until gelatin dissolves – about 3 minutes. Remove from heat; add beef bouillon, pour a 1/4-inch layer of the aspic in an 8-inch round pan and chill until slightly jelled – about 5 minutes; place garnish of carrot and green onion slices, celery leaves on aspic; chill 10 minutes longer. Then mold chopped live on top of aspic – reserving balance of aspic. To serve: place pan in a dish of hot water for 5 seconds and unmold. Whip reserved aspic and decorate around the mold.

Yorkshire Chicken

2 cups diced roast chicken, and pan drippings
2 eggs
1/3 cup oil
1 cup milk
1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon pepper

Heat oven to 400°. Place chicken and drippings in a well-greased 2-quart casserole; put in oven to heat. Beat eggs in a bowl; add oil and milk. Sift dry ingredients and blend with liquid mixture. Pour batter over heated checking and return to oven for 30-35 minutes or until golden brown.

Serves 4
