Hamburger Stroganoff

1 pound ground beef
1/2 cup chopped onion
1/4 cup butter or margarine
2 tablespoons flour
1 teaspoon salt
1 clove garlic, minced
1/4 teaspoon pepper
1 can (4 ounces) mushroom stem and pieces, drained
1 can (10 1/2 ounces) condensed cream of chicken soup
1 cup dairy sour cream
Poppy Seed Noodles (below)

In large skillet, cook and stir meat and onion in butter until meat is brown and onion is tender. Stir in flour, salt, garlic, pepper and mushrooms; cook 5 minutes, stir in flour, salt, garlic, pepper and mushrooms; cook 5 minutes, stirring constantly. Stir in soup; heat to boiling, stirring constantly.

Reduce heat; simmer uncovered 10 minutes. Stir in sour cream; heat through. Serve over Poppy Seed Noodles. 4 servings.

Poppy Seed Noodles: Cooke 8 ounces medium noodles as directed on package; drain. Stir in 2 teaspoons poppy seed and 1 tablespoon butter.

Brighten this popular casserole with a parsley or chive garnish from your kitchen garden or a generous shake of paprika. Add a green salad and rolls and you have a savory dinner for four.

Sombrero Pie

Ingredients

1/2 pound ground beef
1/2 pound ground lean pork
1 large onion, sliced
2 1/2 cups tomato juice
1 package (10 ounces) frozen corn (1 3/4 cups)
1 to 2 tablespoons chili powder
1 teaspoon salt
1/4 teaspoon pepper
Cornmeal Pastry (below)

Directions

In large skillet, cook and stir meat and onion until meat is brown and onion is tender. Drain off fat. Stir in remaining ingredients except pastry. Heat to boiling; reduce heat and simmer 10 minutes. Heat oven to 400°. Prepare pastry. Pour meat mixture into ungreased baking dish, 11 1/2 x 7 1/2 x 1/12 inches. Cover with pastry; seal to edges of baking dish. Bake 30 to 35 minutes.

Makes 4 to 6 servings.

Cornmeal Pastry

Ingredients

1 cup Gold Medal Flour*
1/4 cup cornmeal
1/2 teaspoon salt
1/3 cup plus 1 tablespoon shortening
3 tablespoons cold water

Directions

Measure flour, cornmeal and salt into bowl. Cut in shortening thoroughly. Sprinkle in water, 1 tablespoon at a time, mixing until all flour is moistened. Gather into a ball; roll into rectangle, 12 x 8 inches, on lightly floured cloth-covered board. Fold length-wise in half; cut slits on folded edge.

*If using self-rising flour, omit salt.

Tuna Ring With Cheese Sauce

Ingredients

1 egg
2 cans (7 ounces each) tuna, drained
1/2 cup chopped onion
1/2 cup shredded sharp Cheddar cheese (about 2 ounces)
1/2 cup snipped parsley
1 teaspoon salt
1/4 teaspoon pepper
2 cups Bisquick baking mix
1/2 cup cold water
Cheese Sauce (below)

Directions

Heat oven to 375°. Beat egg slightly; set aside 2 tablespoons of the egg. Stir tuna, onion, cheese, parsley, celery salt and pepper into remaining egg. Stir baking mix and water to a soft dough; knew 5 times on floured cloth-covered board. Roll into rectangle, 15 x 10 inches. Spread with tuna mixture.

Roll up, beginning at long side. With sealed edge down, shape into ring on greased baking sheet; pinch ends together. With scissors, make cuts 2/3 of the way through ring at 1-inch intervals, Turn each section on its side to show filling, Brush top with reserved egg. Bake 25 to 30 minutes. Serve with hot Cheese Sauce.

4 to 6 servings

Cheese Sauce

Ingredients

1/4 cup butter or margarine
1/4 cup Bisquick baking mix
1/4 teaspoon each salt and pepper
2 cups milk
1 cup shredded Cheddar cheese (about 4 ounces) or 1/2 cup crumbled blue cheese

Directions

Melt butter over low heat. Blend in baking mix, salt and pepper. Cook over low heat, stirring until smooth and bubbly. Remove from heat, stirring until smooth and bubbly. Remove from heat; stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in cheese until melted.

Frankfurters In Crust

Ingredients

8-ounce package refrigerated quick crescent rolls
1/3 cup mustard-pickle relish
6 frankfurters
2 tablespoons evaporated milk
1 tablespoon sesame seeds

Directions

Preheat oven to 375°. Unroll crescent rolls to a rectangular shape, pressing seams together. Spread relish over pastry, leaving a 1-inch border all around. Place frankfurters in rows of three down center of pastry; bring sides of dough together over frankfurters and press to seal; press ends of dough to seal. Place seam side down, on an ungreased baking pan. Perforate top of crust with the tines of a fork; brush with evaporated milk; sprinkle with sesame seeds. Bake 15 to 20 minutes – until golden brown. Slice crosswise to serve.

Serves: 3 to 4

Preparation time: 35 minutes

I actually made this recipe for my long-suffering husband Dave and the results were posted on my Open Salon blog. This is a family favourite, particularly amongst the Labretards.

 

Turkey With Noodles

Ingredients

1 pound ground turkey
2 tablespoons oil
2/3 cup chopped onion
1/3 cup chopped green pepper
1 clove garlic, chopped
1/4 pound fresh mushrooms, sliced
8-ounce package noodles
1/4 pound Cheddar cheese, shredded
1 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper
28-ounce can tomatoes

Directions

In a large skillet, lightly brown turkey in oil. Add onions, green peppers, garlic and mushrooms; cook until onions are transparent. Arrange dry noodles over mixture; sprinkle with cheese, salt and peppers. Pour tomatoes on top; cover and bring to a boil. Reduce heat and simmer 30 minutes; stir mixture and cook 10 to 15 minutes longer.

Serves:6

Preparation time: 1 hour 15 minutes

Cottage Cheese Meatloaf

Ingredients

2 pounds ground beef
¼ cup bread crumbs
½ cup grated raw potato
½ cup chopped onion
2 tablespoons chopped chives
½ cup shredded raw carrot
1 cup creamed cottage cheese
1 egg
2 teaspoons salt
½ teaspoon pepper

Directions

Preheat oven to 350°. Combine the ground beef with all the other ingredients. Mix lightly until well blended. shape into a loaf in a 9x5x3-inch pan. Bake for 1 hour. Allow to stand about 5 minutes before cutting.

Serves:6

Preparation time: 1 hour, 20 minutes
