Oyster Bake

1 1/2 cups (10-ounce package) frozen chopped spinach, thawed at room temperature
2 medium carrots, sliced
2 teaspoons grated lemon rind
12 ounces drained canned oysters
1 cup skim milk
1/4 teaspoon imitation butter flavoring
2 drops hot sauce
Fresh spinach leaves

Combine spinach and carrots in baking dish. Sprinkle with lemon rind. Place oysters on top of vegetables. Combine skim milk, butter flavoring, and hot sauce; pour over oysters. Bake at 350°F (moderate oven) for 10 minutes, or until hot. Garnish with fresh spinach leaves. Divide evenly. Makes 2 dinner servings.

Cherry Pies

1 cup frozen unsweetened cherries or (30 small fresh pitted cherries)
1/2 cup cold water
Artificial sweetener to equal 4 teaspoons sugar, or to taste
1 envelope unflavored gelatin
Dash of cinnamon
2 slices enriched white bread, crumbed
2 tablespoons imitation (or diet) margarine

Combine cherries, cold water, sweetener, gelatin, and cinnamon in a small saucepan. Stir over low heat until gelatin is dissolved. Reserve one-fourth of the bread crumbs. Divide remainder in half and press against bottom and sides of 2 individual pie dishes. Divide cherries evenly into dishes, and sprinkle each portion with equal amounts of remaining crumbs. Bake at 350° (moderate oven) for 10 minutes or until topping browns. Dot each pie with 1 tablespoon imitation margarine, and bake 1 minute longer. Makes 2 servings.

Southwestern Chili Chicken

1 cup water
1/2 medium green pepper, chopped
1 packet instant chicken broth and seasoning mix or 1 chicken bouillon cube
1 cup skim milk
2 slices enriched white bread
1 pound cooked white meat chicken, cubed
1 chili pepper, finely chopped

Combine water, green pepper, and broth mix, in saucepan. Cook over moderate heat, stirring frequently, for 20 minutes. Add skim milk. Tear bread into small pieces and place in blender container; process at medium speed, to make crumbs. Add crumbs to bouillon mixture. Bring to just below boiling point and cook until sauce is thickened. Add chicken and chili pepper; heat. Mix well and divide evenly into soup bowls. Makes 4 luncheon servings.

Celery Victor

1 bunch celery
1 cup water
1 beef bouillon cube
1/4 cup low calorie Italian salad dressing
Pimiento strips

Trim root end off celery but do not separate stalks. Remove leaves and coarse outer stalks. Cut celery bunch crosswise once so bottom section is 5 inches long. Cut bottom section crosswise into quarter; tie quarters with string.

In skillet, heat water to boiling; dissolve bouillon cube in water. Add celery bundles. Cover; heat to boiling. Cook about 15 minutes. Drain celery; place in shallow glass dish. Pour salad dressing over celery. Refrigerate 3 hours, turning bundles twice.

To serve, place a bundle cut side down on each salad plate; remove string. Top with pimiento strips. 4 servings (30 calories each).

CELERY VICTOR II

Pour 1/4 cup low calorie Italian salad dressing over 2 cans (16 ounces each) celery hearts, drained, and 2 medium tomatoes, cut into wedges, in shallow glass dish. Cover; refrigerate 2 hours. To serve, arrange vegetables on Bibb lettuce. 6 servings (25 calories each).

Chocolate “Brownie” Dessert

2 envelopes unflavored gelatin
1/4 cup cold water
3/4 cup boiling water
1 1/3 cups nonfat dry milk
Artificial sweetener to equal 1 cup sugar, or to taste
2 tablespoons chocolate extract
Red and green food coloring

Sprinkle gelatin over cold water in blender container to soften. Add boiling water; process at medium speed until gelatin is dissolved. Add remaining ingredients, except food coloring; process at high speed to blend. Pour into an 8x8x2-inch square pan. Chill, uncovered until firmly set. Divide evenly into squares. Makes 4 servings.

“COCONUT” MACAROONS
1 1/2 cups non-fat dry milk
2 medium apples, peeled, cored and grated
1/4 cup plus 2 tablespoons brown sugar replacement
1/2 teaspoon cinnamon
1/2 teaspoon coconut extract

Combine all ingredients in a mixing bowl; mix thoroughly. Drop by teaspoonfuls onto a non-stick cookie sheet. Bake at 350°F (moderate oven) for 18 minutes. Store in a tightly covered container. Divide evenly. Makes 4 servings; about 2 dozen cookies.

Fish “Tacos”

1/2 cup shredded cabbage
1/4 teaspoon celery salt
2 slices whole-wheat bread, toasted
8 ounces cooked cod or sole, flaked
1/4 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon onion powder
1/4 cup sliced pimentos
1/4 cup chicken bouillon
2 tablespoons wine vinegar
2 garlic cloves, minced
1/4 teaspoon paprika
1/4 teaspoon pepper
Pimento

Mix cabbage with celery salt, spoon 1/2 mixture onto each slice of toast. Combine fish, chili powder, salt, and onion powder; spoon 1/2 of mixture over each portion of cabbage. In blender container, combine pimentos, bouillon, vinegar, garlic, paprika, and pepper; process at medium speed until mixture is smooth, then pour, evenly divided, over fish. Garnish with pimento. Makes 2 luncheon servings, 1 “taco” each.

Fish Balls

8 ounces flounder fillets, cut in strips
8 ounces halibut fillets, cut in strips
1 small rib celery, sliced
1 tablespoon dehydrated onion flakes
1 teaspoon salt
Artificial sweetener to equal 1 teaspoon sugar
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1 tablespoon unflavored gelatin
1/2 cup cold water
Romaine leaves
1/4 cup prepared horseradish
Radish slices

Preheat oven to 350°F. Put fish and celery through fine blade of grinder (or grind 2 times or place in blender container and process until smooth). Add onion flakes, salt, sweetener, garlic powder, and pepper; mix well. Stir gelatin into mixture. Add cold water, 1 tablespoon at a time, until mixture will no absorb any more. Shape mixture into balls, about 2 inches in diameter. Bake 15 minutes, or until cooked throughout. Serve on bed of romaine leaves. Serve with horseradish and radish slices. Divide fish balls evenly. Makes 2 dinner servings.

Chicken Salad With Cottage Cheese Sauce

Cooking time: few mins.
Preparation time: 10 mins.
Main cooking utensil: saucepan

For 4 servings you need:
1/2 lb. cooked chicken*
1/4 lb. sliced lean ham
lettuce
watercress
Belgian endive
pickled onions

Cottage cheese sauce:
1 1/2 tablespoons red currant jelly
1 cup cottage cheese
1 teaspoon horseradish cream
1/2 cup coffee cream
seasoning

Approximate calories:
Chicken – 330 for 1/2 lb.
Ham – 400 for 1/4 lb.
Cottage Cheese – 200 for 1 cup
Red currant jelly – 90 for 1 1/2 tablespoons

*steamed if possible

1. Arrange the sliced meat on a plate with the crisp lettuce leaves, watercress, endive and pickled onions.

2. Sauce: Melt the red currant jelly over low heat, cool slightly.

3. Blend ingredients together, fold in cream, and season to taste.

TO SERVE: With the savor cottage cheese sauce.

TO VARY: Use all chicken. A cottage cheese dressing blends with many salads. The jelly may be omitted and a little lemon juice and grated rind used in its place. If cottage cheese is unattainable, use finely grated cheddar cheese, but this is higher in calories, i.e. approximately 480 calories for 4 oz.

NOTE: Choose chicken, turkey – preferably steamed or roasted – do not eat skin or stuffings or sauces, lean game may also be included. Avoid duck and goose.

Stuffed Apples Ganges

2 medium apples
8 ounces drained, canned shrimp, chopped (reserve 2 whole shrimp for garnish)
1 cup boiling water
2 packets instant chicken broth and seasoning mix or 2 chicken bouillon cubes
1 teaspoon dehydrated onion flakes
1 teaspoon lemonjuice
1/4 teaspoon curry powder
Watercress

Cut a thin slice off top of apples. Remove and discard cores; scoop out centers of apples, leaving thing shells. Chop scooped-out pulp and pulp from thin top slice; mix with shrimp. Combine boiling water, broth mix, and onion flakes in a bowl; stir until mix dissolves. Cool 10 minutes, then add lemon juice and curry powder. Mix half of broth mixture with apple-shrimp mixture; divide evenly in hollowed-out apples. Arrange stuffed apples in a baking dish. Pour half of remaining broth mixture over each apple. Bake at 350° (moderate oven) for 20 minutes. Serve each stuffed apple on bed of watercress, garnished with one reserved whole shrimp. Makes 2 luncheon servings.

Bean and Mushroom Salad

2 envelopes unflavored gelatine
2 1/2 cups cold water, divided
1 tablespoon dehydrated onion flakes
1/2 cup tarragon vinegar
Artificial sweetener to equal 1/2 cup sugar
1 teaspoon salt
2 cups whole green beans, drained
1/2 cup chopped pimiento
1/2 cup sliced mushrooms, drained
Watercress

Sprinkle gelatin over 1/2 cup cold water in saucepan. Stir in dehydrated onion flakes. Stir over low heat until gelatin dissolves. Stir in remaining water, vinegar, sweetener, and salt. Chill until syrupy. Fold in beans, pimento, and mushrooms. Turn into a 5 -cup mold. Chill until firm. Unmold. Garnish with watercress. Divide evenly. Makes 4 servings.
