You will need:
1 lb beef fillets
salt and pepper
1 tablespoon oil
Garnish:
1 onion, chopped
parsley
little minced pickles
2 anchovy fillets
1 teaspoon capers
1 teaspoon paprika
4 egg yolks
Remove the skin from the meat.
Chop it with a sharp knife. Season with salt and pepper.
Knead the meat with a little oil, and form into 4 flat thin patties.
Make lines on the surface with the back of a knife. Place the egg yolks in the centre of the meat patties.
Garnish attractively with chopped onion, parsley, minced pickles, anchovies, capers and paprika.
